Registered dietitian Rima Kleiner, MS, stopped by FOX8 studios to whip up these easy and tasty apple recipes.

Apple Chips

3 apples, thinly sliced
2 tsp. cinnamon

Preheat oven to 200°F. Spread apple slices in one layer on two baking pans. Sprinkle with cinnamon.  Bake for 2½ hours, flip apples halfway through. Turn off oven, but keep apples in oven for another hour.

Overnight Quinoa-Apple Cereal
¼ cup rolled oats
¼ cup quinoa, cooked
¾ cup skim milk (or preferred milk alternative)
1 apple, diced
2 Tbsp. raisins
1 Tbsp. ground flax seed
1 tsp. honey
¼ tsp. vanilla extract
1 tsp. cinnamon

Combine all ingredients. Place in container with lid or divide evenly between two mason jars, seal and refrigerate overnight. In the morning, heat cereal in microwave or on stove until heated through. Makes 2 servings.

Kale & Apple Salad
4 cups kale, cut or pre-washed kale salad
2 Tbsp. olive oil, divided
1 apple, thinly sliced
4 Tbsp. goat or Feta cheese
2 Tbsp. pumpkin seeds
2 Tbsp. apple cider vinegar
1 tsp. honey
Juice of ½ lemon
Salt and pepper, to taste

Using a drop of olive oil, massage kale leaves between palms. Mix kale leaves, apple, cheese and pumpkin seeds. In a separate bowl, whisk remaining olive oil, vinegar, honey and lemon juice. Drizzle salad dressing on salad; coat well. Sprinkle with salad and black pepper, if desired. Makes 4 servings.

Apple & Turkey Sausage Noodles
1 (16 oz.) package wide egg noodles
1 lb. Italian or kielbasa turkey or soy sausage
½ Tbsp. butter or margarine
3 apples, cored and thinly sliced
1 onion, thinly sliced
¼ to ½ cup amber lager ale
4 Tbsp. brown sugar
¼ cup balsamic vinegar
Cinnamon, to taste

Cook pasta according to directions. While pasta is cooking, cook turkey or soy sausage according to directions. Heat butter over medium heat. Add apples and onion; cook for 10 minutes or until onions are translucent and apples are soft. Add beer, brown sugar, vinegar and cinnamon. Add sausage to apple-onion mixture; cook for 2 minutes, or until heated through. Drain pasta; divide between four bowls. Top pasta with sausage-apple mixture. Makes 4 servings.

Baked Brown Sugar Apples
½ cup brown sugar, firmly packed
½ tsp. cinnamon
¼ tsp. nutmeg or pumpkin pie spice
¼ cup raisins
¼ cup rolled oats
½ Tbsp. unsalted butter, chopped
4 baking apples, washed and cored

Preheat oven to 350°F. In small bowl, mix brown sugar with next 5 ingredients (cinnamon through butter). Place apples in baking dish; add just enough water to baking dish to cover the bottom of the dish. Divide brown sugar-cinnamon mixture between four apples and stuff into the center of each cored apple. Bake for 25-30 minutes, or until apples are tender. Baste with juice from apple occasionally. Let apples cool. Serve with plain nonfat Greek yogurt sprinkled with cinnamon or with vanilla frozen yogurt. Makes 4 servings.
