Cheesy SPAM Zucchiniwich

1 (12 ounce) can SPAM Classic, sliced
2 large zucchini (1 shredded, 1 cut into thin strips)
1 tablespoon yellow mustard
1 cup Italian dressing
4 – 6 cheese slices
1 teaspoon salt
1 teaspoon dry Italian seasoning
1 teaspoon onion powder
1/3 cup self rising flour
1 teaspoon Texas Pete
3 eggs

Cut SPAM Classic into 1/4-inch slices and slightly brown in skillet. Set aside to cool. Cut 1 zucchini into “matchstick” strips about 4 inches in length. After the SPAM has cooled, cut each piece lengthwise into strips. Mix 1 tablespoon mustard with 1 cup Italian dressing. Pour a bit of dressing mix over the zucchini and SPAM strips to marinate while baking the zucchini bread. Reserve the remaining dressing to use as dip or drizzle on finished Zucchiniwich. Cut strips of cheese and set aside.

For zucchini dough, mix salt, dry Italian seasoning and onion powder with 1/3 cup self rising flour (if you only have all-purpose flour, add a bit less than 1/2 teaspoon baking powder also). Shred 1 large zucchini (blot with paper towel if very wet) and add in Texas Pete and 3 beaten eggs. Combine zucchini egg mixture with flour. Pour and spread the batter into a 9 x 13-inch greased or sprayed baking pan or cookie sheet. Bake at 375 degrees for about 10 minutes or until just cooked and set.

Take out and score cutting lines. Score lengthwise down the center. You can make larger zucchiniwiches by divided the other way in halves (this well be 4 to 4 1/2 by 6-inch fold-overs) or divide in thirds which will make 6 smaller 4 1/2 by 4-inch fold-over zucchiniwiches. After scoring cut through to separate thoroughly, place strips of cheese and marinated SPAM and zucchini on 1 half of each zucchini dough section and fold over. Place pan back in oven to bake for an additional 10 minutes or so to lightly brown and melt cheese. Can be put under broiler for the last few minutes but watch carefully so does not brown too much. Use reserved mustard dressing in small saucers for dipping Zucchiniwich or drizzle in or on as desired.
