Holiday Recipes

Spiced Rubbed Smoked Shrimp with Fresh Fruit Salsa and White Lightning Sauce

1 lb. Jumbo Shrimp (De-veined and peeled)
Bib's Dry Rub

Fruit Salsa:
2 Mangoes - diced
2 c. Fresh Pineapple - diced
1 jalapeno- de-seeded and diced
3/4 c. Red Onion - diced
1 small Red Bell pepper - diced
Juice of 2 Limes
Salt and Pepper to taste

White Lightning Sauce:
1/2 c. Mayonnaise
1/2 block cream cheese, softened
1/4 c. Ranch dressing
2 T. prepared Horseradish Sauce
2 tsp. fresh Lemon juice
Splash of cider vinegar
Splash of White Lighting
Salt and Pepper to taste

Rub Shrimp with Dry Rub and set aside

Fruit Salsa: Combine fruit, peppers, onion in a medium size bowl. Add juice of 2 limes and toss, salt and pepper, Set aside
White Lightning Sauce: Whisk all ingredients together in bowl until smooth. Season with salt and pepper. Refrigerate until needed.
Place Shrimp on a cookie sheet and put on the Smoker at 250 degrees. Smoke until tails turn pink, approx. 5 to 7 minutes.
Plate Shrimp and top with Fruit Salsa and serve with White Lightning Sauce on side or drizzled on plate.

Bib's Spiced Pepper Rubbed Ribeye Bruschettas with Roasted Red Pepper & Goat Cheese

Whole or Half Ribeye
Rub with Bib's Dry Rub and place on 250 degree Smoker. Smoke until internal temp. reaches 135 degrees (approx. 2 hrs.). Let it
rest 30 min. to 1 hour. Slice very thin.

Roasted Red Pepper and Goat Cheese

2 Red Bell Peppers
1 medium Red onion - diced
2 T. Olive Oil
2 T. Balsamic Vinegar (Aged)
1 T. fresh Oregano
Juice from 1/2 lemon
1/2 c. crumbled Goat Cheese
Salt and Pepper to taste

Roast Red Peppers, peel, de-seed, and dice. In medium bowl combine peppers with all other ingredients. Refrigerate until needed.
Mixture makes approx. 12 Bruschetta. Double or Triple Recipe as needed for large parties.

Slice Baguette and toast on both sides under broiler. Rub with garlic, set aside.

Build your Bruschetta: Place 1 or 2 thin slices of Ribeye on toast. Top with the Red Pepper and Goat Cheese Mixture. Garnish as desired.

Pecan Topped Smoked Brie

1 - 15 ounce Round of Brie Cheese
1/2 c. chopped Pecans
1/4 c. Brown sugar
2 T. Maple Syrup (Divided)
Crackers or Toast points

Unwrap Cheese and place on cookie sheet or pie pan. Brush with 1 T. of syrup. Top with chopped pecans. Pat Brown Sugar on top and drizzle
with remaining syrup. Place in 250 degree Smoker for 30 to 50 min. until sugar is lightly golden and Brie is warm, Not Runny.
Garnish with Berries if desired. Serve with Crackers or Bread

Holiday Chess Tarts with Pecans

10 or 12 Frozen Tart Shells
1 c. sugar
1/2 c. soft butter
3 large eggs
1 1/2 tsp. vinegar
1 tsp. vanilla
1 tsp. corn meal
1 c. chopped pecans

Thaw and prepare tart shells as directed on package. Divide chopped pecans between all shells.
Mix all ingredients together, quickly pour into prepared tart shells. Place on cookie sheet and bake at 350 degrees for 45 min.
or until center is set. Garnish with any fresh berries and a mint leaf.
