Recipe: Vanilla Gelato with Caramelized Pineapple and Blueberry Compote

Caramelized Pineapple

4 Pineapple Rings
½ cup Brown Sugar
Butter

Drain the pineapple rings and pat dry with paper towels. Dip them in the brown sugar. In a sauce pan over medium heat, sauté the pineapple rings until they are caramelized. Remove from pan and let cool down.

Blueberry Compote

2 cups Blueberries
1 ounce Orange Juice
¼ cup sugar
1 teaspoon Lemon Juice
½ ounce Vanilla Extract
1 ounce Unsalted Butter

Place 1 cup of the blueberries and the remaining ingredients except the butter in a sauce pan and cook over medium heat for approximately 8 minutes. Remove from the heat and add the remaining cup of blueberries and the butter and toss until the butter is melted and combined.

Plate up

Place 1 Pineapple ring in the center of a plate. Place 1 scoop of the Vanilla Gelato on top of the Pineapple. Ladle the warm Blueberry Compote over it.  Add a dollop of whip cream and a mint leaf for presentation.
