Recipe: Redneck Caviar (Pimento Cheese)

• 2LBS block sharp white cheddar
• 1/4 cup roasted red peppers(diced)
• 2 Tbsp champagne vinegar
• 1 cup mayo
• 1 tbsp Kosher salt
• 1 Tsp black pepper

1)  Finely shred white cheddar in a mixing bowl
2) Add vinegar mayo, salt and pepper and  mix thoroughly
3) Add diced red pepper and mix again
4) Refrigerate for 2 hours
