Several sausage-based tailgating recipes

JAMESTOWN, N.C. — With students returning to school, the leaves will soon begin to change and fall sports take over the scene.

In today’s Recipes, Keith Gardiner and Al Romano, chefs at GTCC, discuss several easy-to-make sausage-based recipes for tailgating.

Breakfast sausage served with a potato pancake and topped with an over easy egg:

Ingredients:

  • 1 lb breakfast sausage
  • 1 lb shredded potatoes
  • ¼ C sautéed minced onion
  • 8 whole eggs
  • Salt and pepper to taste

Method:

  1. Make four equal size patties from the sausage, cook in saute pan till done, keep warm.
  2. Mix onion, potato and salt and pepper together and form pancakes.
  3. Sautee potato until golden brown on both sides and cooked all the way through.
  4. Cook eggs over easy two at a time, then place potato pancake on a plate, top with sausage then with egg and serve for early football games where a breakfast item might be needed. Accompany with fresh fruit or any of your favorite breakfast side dishes.

Green chili sausage sliders with chipotle mayo and caramelized onion and sharp cheddar cheese:

Ingredients:

  • 1 lb Green chili sausage (use recipe below or purchase your favorite brand)
  • 8 each slider size rolls
  • 1 chipotle pepper chopped with some ancho sauce
  • ½ cup mayo
  • ½ cup diced onions
  • 4 oz sharp cheddar

Method:

  1. Make 8 equal size patties with the sausage and grill until done
  2. While sausage is cooking caramelize onions in a saute pan
  3. Mix chipotle pepper with may and season with salt and pepper
  4. Slice rolls in half and warm on grill
  5. Melt cheese on top of each patty
  6. Assemble sliders use a frill pick to keep together and serve with a nice black bean salad or another one of your favorite sides.

Italian sausage with peppers and onions:

Ingredients:

  • 4 each Italian sausage links
  • 1 each green pepper julienne
  • 1 each red pepper julienne
  • 1 cup julienne onion
  • Pinch garlic
  • 1 cup diced fresh tomato
  • 4 each sub rolls or French bread
  • Fresh grated parmesan cheese
  • Salt and pepper to taste

Method:

  1. Grill sausage and keep warm
  2. Saute onions until tender, add garlic and tomatoes, then peppers cook till liquid is gone and peppers are tender
  3. Warm rolls or bread
  4. Place sausage on a roll, top with pepper mixture and freshly grated parmesan cheese. Serve with your favorite pasta salad

Bratwurst with Sauerkraut, apples, potatoes and coarse grain mustard (use recipe below or purchase your favorite brand)

Ingredients:

  • 4 each bratwurst links
  • 1 cup good quality sauerkraut
  • 1 diced Granny Smith apple
  • 1 diced onion
  • 1 diced potato
  • Pinch caraway seeds
  • Salt and pepper to taste
  • Toasted rye bread or bagel on the side
  • Coarse grain mustard

Method:

  1. Grill brats until done, keep warm
  2. Saute onions until tender, add potatoes and slightly brown, add apples and sauerkraut and cook till potatoes and apples are tender. Season with salt and pepper
  3. Place sauerkraut mixture on a plate, top with bratwurst, coarse grain mustard and serve with toasted rye bread, bagel or bread of your choice. Can also make sub or sandwich out of this if you like.
