DETOX BROCCOLI SOUP

  • 2 cups broccoli florets
  • 2 celery stalks, finely diced
  • 1 onion, finely diced
  • 2 garlic cloves
  • 1 cup kale
  • 1 carrot,  finely chopped
  • 2 cups low sodium vegetable broth
  • ½ tsp sea salt
  • ½ lemon, juice only
  • 1 tsp coconut oil
  • 1 tbsp chia seeds
  1. In a soup pot, heat the coconut oil, add the onion, garlic, carrot, and broccoli and cook over low heat for five minutes, stirring frequently.
  2. Add the vegetable broth, bring to a boil, then cover the pot with a lid and let simmer for 5-7 minutes, until the vegetables are tender but not mushy.
  3. Stir in the greens, then transfer into the blender, add the chia seeds and process to obtain a smooth cream.

BEET Detox Soup

  • 3 medium beets
  • 2 carrots, finely diced
  • 1 onion, finely diced
  • 2 garlic cloves
  • 1 small leek, finely diced
  • 1 tsp coconut oil
  • 2 cups vegetable broth, warm
  • ¼ tsp sea salt
  1. Place the unpeeled beets in a pot, cover with water, bring to boil then simmer for 30 minutes until tender.
  2. Drain
  3. Combine everything in a blender and serve

DETOX SALAD

  • 1 bunch of kale, leaves chopped kinda small
  • 1 cup broccoli
  • juice of 1 lime
  • salt and pepper (I used Himalayan pink salt)
  • 1 small beet thinly sliced
  • 1 carrot, thinly sliced
  • 1 ripe avocado, peeled + sliced
  • 2 sprigs of basil, chopped
    handful of blueberries

Dressing

  • 1/2cup blueberries
  • 1/2 inch piece of ginger, peeled + chopped
  • 2 tbsp raw apple cider vinegar
  • 1 tbsp maple syrup
  • splash of water
  • salt + pepper
  • 1/4 cup extra virgin olive oil

Omega Seeds

  • handful sunflower seeds
  • handful pumpkin seeds
  • 2 tbsp flax seeds
  • 2 tbsp chia seeds
  • handful of puffed rice or millet
  • pinch of salt
  1. In a large bowl, mix the kale and chopped broccoli with the lime juice, salt and pepper.  Taste a leaf for seasoning, adjust and set aside. Chop and prep all of the other ingredients
  2. Make the dressing: combine all of the ingredients in a blender and blend on high until you have a creamy mixture. Check for seasoning and sweetness
  3. In a sauté pan, combine all of the omega seed mixture over medium heat. Stir them around here and there until they smell toasty. Remove from the heat and allow to cool slightly.
  4. Combine everything and dress

ALMOND PANCAKES

  • 1 cup almond meal
  • 1 cup almond milk
  • 2 tsp. baking powder
  • pinch of salt
  • 1 tbsp. flax meal
  • 1 tsp. cinnamon
  • coconut oil for the panMix all ingredients together until you have a runny pancake batter.
  1. Mix all ingredients together until you have a runny pancake batter.
  2. Heat your skillet and use coconut oil
  3.  If you are not detoxing you can add an egg to this batter
  4.  This pancake is great sweet or savory
