Mother’s Day breakfast in bed ideas

Let mom sleep in this Sunday for Mother’s Day, and then serve her breakfast in bed.

Mother’s Day Recipes

Berry Good Muffins with Lemon Glaze

1 c. strawberries, chopped and sprinkled with 2 tbsp sugar (let sit for 15 min)
1 c. sugar
1 1/2 c. all purpose flour
1/4 tsp ground cinnamon
1 tsp fine ground sea salt
1 mashed ripe banana
2 large eggs
1/4 c. canola oil
1 lemon, zested
1/2 c. blueberries
1 c. pecans (optional)
Preheat oven to 350 degrees and line cupcake pans (makes 12).

Mix flour, cinnamon, baking soda, nutmeg and salt. In another bowl, whisk together the banana, eggs, oil, sugar, strawberries with the juice, and zest. Mix dry ingredients into the wet ingredients just until combined. Gently fold in nuts and blueberries. Use an ice cream scoop to put batter into pans. Bake about 12 minutes or until toothpick comes out slightly crumbly but not wet.

Glaze:
Mix 2 tbsp of heavy cream into 1/2 c powdered sugar. Add juice and zest from 1/2 lemon. Mix well and drizzle over warm muffins.

Spinach Bacon Frittata

8 eggs
1/2 whole milk
1 1/2 baby spinach8 slices bacon
1/2 large onion
1/2 cup sliced mushrooms
1 c. grated mozzarella
1 tsp fine ground sea salt
1 med tomato, chopped

Preheat oven to 400 degrees. Chop bacon and fry out the grease in a cast iron skillet. Drain all but 2 tbsp of bacon grease, and discard the rest. Add onion and mushrooms to bacon grease and sautee for 4-5 min on med high heat. Turn heat to low and add spinach, tearing it roughly while putting it in the skillet. Meanwhile, whisk eggs in a separate bowl, then add milk and salt and stir. Turn heat back to med, add egg mixture and cook just until egg starts to harden around edges (about 5 min). Sprinkle cheese on top and place skillet in oven for about 10 min until frittata is firm. Slice and serve warm. Sprinkle freshly chopped tomato on top of each slice, and sprinkle with another dash of salt.

Banana Nut Bread with Browned Butter Spread

3 1/4 c. sugar, divided
3 tsp ground cinnamon, divided
3/4 c. room temp butter
3 eggs
6 very ripe bananas, mashed
1 16 oz carton sour cream
2 tsp pure vanilla extract
1/2 tsp fine ground sea salt
3 tsp baking soda
4 1/2 c. all-purpose flour
1 c. pecans

Preheat oven to 300 degrees. Grease 2 large or 4 small loaf pans. Mix 1 tsp of the cinnamon and 1/4 c. of the sugar in a bowl and sprinkle into the loaf pans on bottom and all sides. In a large bowl, cream butter and 3 c. sugar until light and fluffy. Mix in eggs, bananas, sour cream, vanilla, and cinnamon. Mix salt, baking soda, and flour in a separate bowl. Add flour mixture to egg mixture, and gently combine but do not over mix. Stir in nuts and divide batter into bread pans. Bake for 1 hour until toothpick comes out clean.

Browned Butter Spread:
1/4 c butter
2 c. confectioner’s sugar
2 tbsp milk
1/2 tsp vanilla
1/2 tsp cinnamon.

Heat butter in saucepan over med high heat until it turns amber in color. Remove from heat and mix in the rest of the ingredients until creamy. Spread over warm banana bread.

Sausage, Egg, and Cheese Pie:

6 eggs, whisked
1 pound sausage, browned and drained
1 cup sharp grated cheddar cheese
1/2 c milk
1/4 c heavy cream
1 pie crust, slightly browned

Preheat oven to 350 degrees. Mix eggs, sausage, cheese, milk, cream and salt & pepper to taste in a bowl. Pour into crust, and bake approximately 35 minutes or until set.

Mother’s Day Mimosas

Mimosa Float:
Freshly squeezed orange juice
Champagne or sparkling wine
Vanilla ice cream
Fresh mint leaves

Fill 1/3 glass with sparkling wine, add a small scoop of ice cream, pour juice on top, and add a mint sprig for garnish.

Strawberry Lemonade Mimosa:
Strawberry Dacquari Mixer
Lemonade
Champagne or sparkling wine

Fill 1/2 glass with sparkling wine, add 2 tbsp strawberry dacquari mixer and top with lemonade. Garnish with a strawberry and lemon wedge.

Raspberry Orange Mimosa:
Freshly squeezed orange juice
Raspberry flavored champagne or sparkling wine
Fresh raspberries
Fill 1/2 glass with sparkling wine and top with orange juice. Drop in raspberries, and garnish with a wedge of orange.

    Just a note of interest. After watching segments like this morning (and previous at Southern Sisters), I will not patronize Southern Sisters. This owner’s continued and blatant disregard for proper sanitary procedures has driven me from their doors for good, One example is using a hand/dish towel to wipe her hands and moving on to the next task. If she will do what she does on television for all to see then what horrible infractions must happen in the kitchen on a regular basis.

    I do acknowledge that many of us do such things in our own kitchens, but rules of sanitation in restaurants are there for our safety and, moreover, the safety of young, old, weak, and ill patrons. I won’t take the chance that I may have something working on me and adding a food borne illness on top of that.
