Chicken Waffles | Crabcakes

Five Points – Barry’s B-Positive Bloody Mary

Bloody Mary Mix
Ingredients:
 2 tsp Horseradish Sauce
 1 ounce A-1 steak sauce
 ½ ounce Texas Pete
 ½ ounce olive juice
 1 bottle Zing Zang Bloody Mary Mix

Directions:
 Combine all ingredients and shake well

Bloody Mary
Ingredients:
 2 ounces bacon-infused vodka
 10 ounces bloody mary mix
 1 cajun grilled shrimp
 1 blue cheese stuffed olive
 Canadian bacon
 Pepperocini
 Tomato
 Green tomato
 Cucumber stick
 Celery stick
 Lemon
 Lime
 Bacon strip
 Pepper jack cheese cube

Directions:
 Add vodka to bloody mary mix and shake well
 Garnish with any combination of remaining ingredients

Five Points – French Toast Batter

Ingredients:
 3 eggs, slightly beaten
 ¼ cup powdered sugar
 ½ ounce vanilla extract
 ¾ cup heavy cream
 ¾ cup half & half
 ½ tsp ground cinnamon
 ½ tsp nutmeg

Directions:
 Combine all ingredients and mix well

Five Points – Hollandaise Sauce

Ingredients:
 1 lb. butter
 6 egg yolks
 1 Tbsp white wine
 1 Tbsp lemon juice
 Cayenne pepper to taste
 Salt to taste

Directions:
 Melt butter and set aside
 Place egg yolks over double boiler and whisk in wine and lemon juice. Continue stirring until yolks start to thicken
 Remove from heat and slowly whisk in butter
 Add cayenne pepper and salt to taste

Five Points – Chicken & Waffles

Chicken
Ingredients:
 Chicken tenders
 2 cups flour
 2 Tbsp parsley
 1 tsp salt
 1 tsp black pepper
 Buttermilk as needed
Directions:
 Mix flour with other dry ingredients
 Dredge chicken tenders in flour mixture
 Dip in buttermilk
 Dredge again through flour mixture
 Fry at 350 degrees for 3 minutes

Waffles
Ingredients:
 1 lb. waffle mix (such as Bisquick)
 3 cups buttermilk
 3 eggs
 1/3 lb melted butter
Directions:
 Combine all ingredients and mix until smooth

Maple Gravy
Ingredients:
 2 cups chicken stock
 2 cups beef base
 ½ ounce fresh thyme
 ¼ cup diced onion
 ¼ cup butter
 ¼ cup all-purpose flour
 1 clove garlic
 2 Tbsp maple syrup
 Black pepper to taste
 Kosher salt to taste

Directions:
 Melt butter in large pot. Add flour and whisk for 3-4 minutes
 In separate pot, add all other ingredients and bring to a boil. Lower to a simmer for 9-10 minutes.
 Transfer mixture through a strainer into pot containing roux. Whisk well making sure there are no lumps.
 Simmer for 4-5 minutes

Five Points – Crabcakes

Ingredients:
 1 lb super lump crab
 2 lbs special crab
 1 egg
 1 slice white bread
 2 Tbsp mayonnaise
 1 tsp lemon juice
 2 tsp Worcestershire sauce
 2 tsp melted butter
 1 tsp whole grain mustard
 1 tsp chopped parsley
 1 tsp Old Bay seasoning

Directions:
 Place bread in food processor; pulse until fine crumbs
 Mix egg, mayo, lemon juice, butter, mustard, Worcestershire, parsley and Old Bay in mixing bowl
 Add bread crumbs
 Pick through crab to remove any shells, then add to mixture
 Gently mix – be careful not to break up crab lumps
 Portion to 4 oz cakes
 Saute on stovetop until cooked through and golden brown
