Most people think about sweet potatoes around Thanksgiving - either topped with pecans or marshmallows.

The North Carolina Agriculture Department has named February the month of the sweet potato -- and they're hoping to encourage people to eat this healthy veggie year round.

Shannon Smith visited Lowes Foods in Clemmons Thursday.

Lowes Foods will offer sweet potato cooking demonstrations this weekend in two Triad stores:

* Feb. 21 -- 2205 Oak Ridge Road in Oak Ridge from 3-6 p.m.
* Feb. 22 -- 1581 New Garden Road in Greensboro from 11 a.m.-2 p.m. and 5820-F N. Church St. in Greensboro from 3-6 p.m.
