Recipe Wednesday: Holiday party tips

Need to spruce up your holiday party trays? Check out the greenery in your yard and your neighbor’s yard and start cutting.

Evergreens are all around us. Gather your greens grab a bag of cranberries and make your trays stand out.

Other garnishes could include lemons, limes or orange. Use little bouquets of evergreens and top them off with little pops of color.

Pine Cone Cheese Balls
1 8 oz package cream cheese, softened
1/2 cup Blue cheese Crumbles
1/2 tsp. chopped garlic
5 strips of bacon, cooked crisp and crumbled
1 tbsp. chopped green onion

Salt to taste
1/8 tsp pepper

1 cup whole almonds
1 cup sliced almond

DIRECTIONS
Combine cream cheese and blue cheese and mix well in a food processor or blender. Stir in the cooked bacon, green onion, garlic and pepper. Cover and chill overnight.
Shape the cheese mixture into two small pinecones on serving plate. Starting at the narrow end, place almonds into the cheese on a slight angle, forming rows. Garnish with pine or rosemary Serve with crackers.

Gourmet Cheese Tray
5 cheeses
1 star fruit or kiwi
1/2 pint blackberries
1/2 pint raspberries
Honeycomb
Fresh Rosemary or Hardy Herbs
Assorted Olives
Sun-Dried Tomatoes

Arrange Cheese on the Tray
Add fruit and olives
Garnish with herbs
Serve With Crackers

Asparagus Straws
1 package phyllo dough
1 stick unsalted butter
1 bunch asparagus
1/2 cup Parmesan cheese
Black Pepper
350 oven

Remove phyllo dough from package and place a damp towel over it to keep it from drying out. Not Wet. Barely Damp.
Place 3 sheets of dough on a cutting board and brush with melted butter Cut the dough in 6 to 8 pieces Place a piece of asparagus and some Parmesan and pepper on the dough Roll it up with the tip hanging out Brush with butter Bake for 12 to 15 minutes

Brie Wrapped in Puff Pastry with Caramelized Onions and Apricot Marmalade
1 package frozen Puff Pastry
1 8 ounce Brie
1/2 onion sautéed in Butter
1 small jar apricot marmalade

Preheat oven to 425
Grease cookie sheet
Roll dough out slightly
Place cheese on dough
Spoon marmalade and onions on top
Bundle pastry up and squeeze and twist
Bake for 20 to 25 minutes
