Dame’s Chicken and Waffles shares comfort food favorites

GREENSBORO, N.C. — On this edition of Recipe Wednesday, Dame’s Chicken and Waffles — one of Greensboro’s newer restaurants — shared some recipes for fried chicken, specialty waffles and other soul food favorites.

The restaurant is located at 301 Martin Luther King, Jr. Drive.  It also has a location at 317 West Main St. in Durham.

Mac ‘N Cheese

  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • 1 quart heavy cream
  • Pinch of nutmeg
  • 2 cups shredded cheddar
  • 1 cup shredded Monterey
  • 1 cup grated parmesan
  • 2 tablespoons spice blend
  • 1 teaspoon salt
  • 1 lb. noodles

Cook butter and flour together over medium high heat for 2 minutes; add heavy cream and cook for 3-5 minutes until slightly thickened; add nutmeg; remove from heat; add 1 cups of cheddar cheese and whisk; let rest for 3-4 minutes

Combine sauce and remaining ingredients in a large mixing bowl; transfer to a lightly buttered casserole dish (2-3 inches deep); garnish w/ cheese: bake uncovered for 35-45 minutes until bubbly and golden brown

Shrimp & Grits

  • 2 cups water
  • Pinch of salt
  • 1/2 teaspoon pepper
  • 1/2 cup white or yellow grits
  • 1/4 cup cream
  • 2 tablespoons butter
  • Sugar to taste
  • 1 tablespoon evoo
  • 1/4 sweet onion, sliced
  • Smoked sausage to taste
  • Salt, pepper to taste
  • 1/3 lb. jumbo shrimp
  • 1 teaspoon spice blend
  • 1/4 cup white wine

Bring water, salt and pepper to a boil; whisk in grits; add cream and return to simmer; cook on medium-low for 8-10 minutes; add butter and cover

Heat evoo in a 8inch skillet over medium-high heat; cook onions and sausage for 3-4 minutes; season w/salt & pepper; add shrimp and spice blend;  cook 2-3 minutes; add wine and simmer until wine reduced by half

Place grits in large shallow bowl; top with shrimp mixture; garnish with cheese and parsley

Sweet Potato Waffle

  • 2 cups all-purpose flour
  • 1/4 cup packed light brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 1/8 teaspoon baking powder
  • Pinch of salt
  • 1 cup heavy cream
  • 1/4 cup sweet potato puree
  • 2 tablespoons melted butter or corn oil
  • 2 whole eggs
  • 1 egg white beaten to stiff peak

Combine and thoroughly mix all dry ingredients in a large mixing bowl; combine all wet ingredient (except whites) in a second mixing bowl

Beat egg whites until they reach stiff peaks

Combine all ingredients into a bowl; let rest in refrigerator or 15-20 minutes

Cook 6-8ounce of batter on a waffle iron at 425 degrees for 2-3 minutes

Orange Honeycomb Shmear

  • 1 lb. butter
  • 1 tablespoon zest
  • 3 tablespoons clover honey
  • 1 orange supreme
  • 1 tablespoon raw sugar

Puree all ingredients
