Holiday treat recipes from Great Harvest Bread Co.

GREENSBORO, N.C. — In this edition of Recipe Wednesday, FOX8’s Shannon Smith will be learning how to prepare some holiday treats from Great Harvest Bread Company.

Great Harvest Bread Company is located in the Friendly Shopping Center.

Recipes:

CONFETTI OATMEAL

Have Prepared in Small Bowls:

  • Chopped Dried Apricots
  • Dried Cranberries
  • Blueberries
  • Chopped Banana
  • Chopped Walnuts
  • Golden Raisins
  1. Prepare Great Harvest Handmade Oatmeal as package directs
  2. Gather everyone around and let them prepare their toppings.
  3. SERVE with SNOWMAN SOUP

SNOWMAN SOUP

  • Hot Chocolate Mix
  • Mini Marshmallows
  • Mini Chocolate Chips

Layer in glass jar the night before Christmas morning.  To Serve:  Add 1 cup boiling water to mixture and stir. Serve in the jar.

CRANBERRY HONEY BUTTER

  • 2 Sticks of Softened Unsalted Butter
  • ½ Cup of Whole Cranberry Sauce
  • ¼ Cup Honey
  • ½ Cup Powdered Sugar
  • ¼ Cup Orange Zest
  • Pinch Salt
  1. Mix together in large bowl all ingredients
  2. Store in airtight container for two weeks.

GINGERBREAD WITH CREAM CHEESE ICING

Mix together in large bowl:

  • 1 Stick of Melted Butter
  • 1 ½ Cup Flour
  • ½ Cup Dutch Cocoa
  • 2 ½ Teaspoons Ground Ginger
  • 1 Teaspoon Baking Soda
  • ½ Teaspoon Cinnamon
  • ¼ Teaspoon Allspice
  • ¼ Teaspoon Nutmeg
  • 1 Cup Brown Sugar
  • ½ Cup Molasses
  • ½ Cup Sour Cream
  • 2 Eggs
  1. Pour into 8 x 8 pan and bake at 350 degrees for 30 minutes or until firm in the center.
  2. Cool and Frost with Icing

CREAM CHEESE ICING

  • 1 Stick Softened Butter
  • ½ Teaspoon Vanilla
  • 16 Ounces Softened Cream Cheese
  • 2 Cups Powdered Sugar
  • Lemon Zest
  • ¼ Teaspoon Lemon Juice

Mix all ingredients until smooth.  Ice cooled Gingerbread and enjoy.

LEMON SCONES

Mix in large bowl:

  • 3 Cups All Purpose Flour
  • 1/3 Cup White Sugar
  • 1 ½ Teaspoon Baking Powder
  • 1 ½ Teaspoon Baking Soda
  • 1/3 Teaspoon Salt
  • ¾ Cup Cold Butter Cut into Small Pieces

Mix with your hands until rough in texture

Add:

  • 9 Tablespoons Milk
  • 3 Tablespoons Lemon Juice
  • 2 Tablespoons Lemon Zest
  1. Roll out mixture into desired size and bake in 350 degree oven until light brown.
  2. 20 Minutes.
  3. Cool and drizzle with glaze.

Glaze:

  • 2 Cups Powdered Sugar
  • 2 ½ Teaspoons Lemon Juice
  • 2 Teaspoons Lemon Zest

Mix together until slightly thick.  Drizzle on cooled scones

REINDEER MUFFINS

Mix together in large bowl:

  • 2 Cups Flour
  • 1 Cup Sugar
  • ¾ Cup Mini Chocolate Chips
  • ½ Cup Dutch Cocoa
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Vanilla
  • 1 Cup Plain Yogurt
  • ½ Cup Milk
  • ½ Cup Oil
  • 1 Cup Chopped Red Cherries
  1. Scoop into paper lined muffin pans and bake at 350 degrees / 20 minutes
  2. Cool before glazing.

Glaze:

  • 2 Cups Powdered Sugar
  • 4 Tablespoons Milk
  • 2 Tablespoons Cherry Juice
  1. Mix together until rather thick.
  2. Pour over muffins and top with a long stemmed cherry.
  3. Sprinkle with mini chocolate chips.
