Recipe: Asian Rainbow Salad with Secret Japanese Ginger Vinaigrette

Use any or all of the colorful lettuce you can find. Top with enoko mushrooms or any other Asian vegetables you can find (example water chest nuts, baby corn). Toss with ginger vinaigrette.

Secret Japanese Vinaigrette recipe:

½ cup chopped red onion
½ cup vegetable oil
1/3 cup vinegar
2tbls. Water
2tbls. Lemon zest
4tbls ginger root
2tbls Ketchup
4tsp. soy sauce
2tsp. sugar
Juice from 2 lemons
Salt and pepper

Process all ingredients in blender until smooth.
