Recipe: Grilled BLAT (Bacon, Lettuce, Avocado, and Tomato)

•    8 Slices Hearty Bread
•    1 Large or 2 Medium Tomatoes, sliced thick
•    12 Slices Bacon
•    1 Head Romaine Lettuce
•    ¼ Cup Mayonnaise
•    ¼ Cup Goat Cheese
•    4-6 Large Leaves of Basil, sliced into ribbons
•    Salt and Pepper to taste
•    1 Avocado, sliced thinly
•    Oil to brush vegetables and bread

Spray 4 Romaine leaves with cooking spray, sprinkle with salt and pepper. Brush tomato slices with oil, sprinkle with salt and pepper. Brush bread with oil. Bring all vegetables, bread, and bacon out to the grill to grill at the same time. Grill Romaine until slightly wilted. Grill tomatoes until you achieve grill marks. Grill Bacon until crisp. Grill bread until toasted. Mix mayonnaise with goat cheese, basil, and season with salt and pepper. Spread on each slice of bread. Layer on 4 slices: a tomato slice, three pieces of bacon, romaine, and a ¼ of the avocado.
